Dehydroacetic acid (DHA) is a broad spectrum of fungicide; it has potent inhibition on bacteria, mold, and yeast, especially mold. It can dissolve in several kinds of oils. However, DHA has poor solubility in water.

It is stable to heat, and the antimicrobial action will not be affected even heat to 248°F so that it can be used in all kinds of heat process food. But it is evaporative along with water steam. So it should be added during the later period of the heating process, and accordingly, the amount should increase.

In addition, Dehydroacetic acid acts as a preservative booster, improving the effectiveness of other antimicrobial agents like Phenoxyethanol. Its inhibiting action is better when in an acid environment.
